Fresh winter salad with arugula, avocado and grapefruit

This flavourful winter salad with arugula, avocado and grapefruit is full of seasonal ingredients that are packed with antioxidants. Perfect recipe to any meal or special event. It is healthy, fresh, flavourful and a little sweet. Sunflower seeds and flaxseed oil boost the omega-3 content, making this dish even healthier. The green I love the most here is arugula, though a spring mix also works well.
Ingredients:
1 medium ripe avocado
1 pink grapefruit
50g spring mix greens (rocket/arugula, lettuce, chard)
For the vinaigrette:
1/2 teaspoon clear honey
2 tablespoons white wine vinegar
2 tablespoons flaxseed oil
2 tablespoons sunflower seeds
Sea salt and freshly ground black pepper, to taste
Instructions:
Using a sharp knife, cut an avocado in half. Twist the two halves to separate, remove the stone and peel the two halves, then slice it.
Peel the grapefruit then break into individual segments. Using a sharp knife, carefully score the straight edge of each segment then peel the membrane from the flesh.
For the vinaigrette - mix the ingredients together, adding the sunflower seeds at the last minute so as not to damage them.
Place greens in a plate, arrange the grapefruit and avocado on top and drizzle the vinaigrette across the salad.
